LAFAYETTE, La. — Several restaurants and stores have reopened since the beginning of phase one, however bars without kitchens remain closed. That's why The Greenroom in Downtown Lafayette made some changes within the past few weeks with plans to open this Friday.
"We decided to deep clean the facility and repaint all of the walls," said Robert Guercio, one of the bar's owners.
The most drastic change, though, comes from the back of the house. A kitchen was installed, allowing staff to serve food and open their doors to customers.
"It's tough mentally as a business owner that you can't go to work," Guercio said. "When you're used to having your business open 365 days, it takes a toll."
He says installing the kitchen and obtaining a food license was a much faster process than waiting for a green light from the state.
"Well, the governor is supposed to make an announcement June 5, but there's no guarantee that bars will be able to open, and for us we didn't want to wait three weeks, then find out we have to wait three more weeks," Guercio said. "That's just not a good way to run your business."
For now the food menu will be limited to hot dogs, chili dogs, and Frito pies, but Guercio says they may do more in the future.
They also were able to expand their outdoor dining permit, opening up 1200 square feet of space for outside dining.
The Greenroom plans to open their doors Friday, May 22, at 4 p.m.
