Taco Tuesday has been a tradition at my house for years. Recently, however, my 17-year-old daughter asked if we could lay off the tacos for a while because she “just wasn’t feeling it.”
I confess I’ve been missing our weekly taco nights. But even I admit that my taco game has fallen into a rut. But now there’s a recipe that might just bring my terrific taco Tuesday nights back in a way that speaks to my daughter’s pasta-loving heart — say hello to One-Pot Taco Spaghetti!
This recipe from Chungah over at Damn Delicious not only combines the best of two cuisines — pasta and tacos — but is also made in just one pot! Any recipe that results in fewer dirty dishes is going to the top of my list.
Another sign of a good recipe is a simple ingredient list. Most of the ingredients for this one-pot dish — like olive oil, ground beef, tomato paste, spaghetti, and several shredded cheeses — are likely items you would already find in your kitchen pantry or your refrigerator. The rest could be grabbed on a super-quick trip down just two aisles in your local grocery store.
Once you have everything you need, you just brown the meat with some taco seasoning, drain the fat off, add the liquid ingredients and place the uncooked spaghetti into the pot. Yup. No extra pot required in which to boil water for the pasta. It cooks right in the tomato and meat sauce. How simple is that?
Once it’s all cooked, you sprinkle the shredded cheese over the top and there you have it — your newest favorite Taco Tuesday dish.
